Shavuot is a great excuse to eat some delicious dairy!

There seem to be many explanations about why Jewish people eat dairy on Shavuot, the holiday where we commemorate Moses receiving the Torah from Mt. Sinai.  Some people say that we eat dairy to symbolize the "land flowing with milk and honey" (Exodus 3:8) promised to the Israelites.  We like the idea of combining milk with sweetness, so this week, the Levana class made a delicious Shavuot treat, blintz souffle!

We followed the steps of the recipe, which included reading the directions on the side of the box...


....buttering the bottom of our baking pan...


...measuring and mixing ingredients...


...putting the blintzes in the pan and pouring over the custard...


...and finally, taking turns sprinkling cinnamon sugar on top!

We read a book about blintzes and tasted our delicious souffle at snack time!  
You can make it at home, too! 

Here's our recipe:

Blintz Souffle

Preheat oven to 350

4 eggs (beaten)
1 ½ cups sour cream
12 blintzes (frozen) cheese or fruit filled
1 tsp vanilla
¼ cup sugar
½ cup orange juice
¼ lb butter
Cinnamon (optional on top before baking)

Melt butter in a 9 x 13 pan
Place frozen blintzes side by side in pan.  Make sure there is room between each blintz
Blend beaten eggs, sour cream, vanilla, sugar and orange juice until smooth
Pour over blintzes and add cinnamon to top

Bake at 350 for 45 minutes to 1 hour.  Top should be lightly browned
